Differences that only truly become apparent when cooking.
Induction vs. glass-ceramic: They may look similar at first glance . But the differences are clearly noticeable both technically and in everyday use . And they also have a significant impact on your electricity bill. We'll show you the differences based on several aspects. How it works
You're certainly familiar with glass-ceramic cooktops . After all, these ceramic cooktops are now found in most kitchens. They work just like cooking on a regular cooktop: The ceramic cooktops heat up after the stove is switched on – indicated by the red rings on the cooking zones – and transfer the heat to the pots and pans placed on them. Once you've finished cooking, it takes a while for the glass-ceramic cooktops to cool down again. At first glance, induction cooktops look like glass-ceramic – but only on the surface. Beneath the glass-ceramic surface of the modern cooktop are flat coils made of copper wire. When you turn on the cooktop and place ferromagnetic cookware on it, the coils generate an electromagnetic field. This creates small electrical currents in the bottom of the pot, which then heat it up. Unlike glass-ceramic cooktops, the cooktop itself remains almost cool with induction – only the pot gets hot . You can cook and fry just as usual.
cleaning
When it comes to the tiresome issue of cleaning, induction has an advantage over glass-ceramic . Because the cooktops themselves barely heat up, it's not quite as critical if milk boils over. Unlike with ceramic cooktops, it hardly burns on. This makes induction slightly superior to glass-ceramic when it comes to cleaning.Cost
Modern induction cooktops are usually more expensive to purchase than classic ceramic cooktops. The new ferromagnetic pots and pans you will also need to buy will further increase the cost. But the more energy-efficient cooking method results in significant savings on the electricity bill. Pots and pans heat up even faster on induction cooktops than on glass-ceramic ones. Induction cooktops use between 15 and 20 percent less electricity than ceramic cooktops.
