You haven't plasticized carefully enough. All staples should be taped. Also, you have used the wrong tape. Read the construction instructions for the plastic and start over.

There is a lot of condensation under a sheet metal roof. Do you have any waterproofing on the roof sheathing?

On the roof sheathing boards, there is roofing felt.

That can hardly cause these problems. Taped staples..? You don't have a single perforation in your house or? Not a single picture nail that penetrates the construction plastic?
