I am going to remove the stairs in the picture and take the opportunity to tear off the outer panel and replace it with something new due to rot. When I measure the boards, they are about 95 mm wide.

I have looked at various websites and can't figure out what these boards are called? And only found 120 mm boards. What are the boards in the picture called?

Then question #2: Is it easy to replace or is it a difficult task to perform?

I believe it is double tongue and groove, 120 is more common but it absolutely exists in 95mm. It should be a fairly simple job. Take the opportunity to improve the construction as well with metal and/or a sacrificial board at the bottom.

The boards are called tongue and groove exterior paneling, base panel, or z-panel and can be found at well-stocked lumberyards. The exact designation depends on the cross-section; it’s best if you can bring a piece to the dealer to show. Common dimensions are 22x95 or 22x120. Note that they fit into each other a bit, so the board is a little wider than what you see. If you know the front and back of a hammer, you should be able to replace the paneling; chiseling away a cast staircase is significantly heavier.
