I am planning to order tongue and groove 34x120 with end matching to use as flooring above the garage/attic. Is it possible to join these without joining them on the rafters?

You can, you might be able to put a short beam between the trusses. Where the joint comes.
 
I would probably avoid that. Unless you, for example, screw a 300 mm long plank under the joint. But what are you planning to have on the floor? And are the rafters spaced at c-c 1200 mm?

In the middle where you will be walking and potentially placing (semi-)heavy things I would avoid it, but towards the edges where at best there is crawl height I find it hard to see that it would be a problem (assuming of course that two seams do not come next to each other).
 
If no more than every third board is jointed at the same cut (within the same truss spacing), it is okay to joint with end tongue.

Yes, there is approximately 120cm between the roof trusses. It's mostly to avoid a lot of waste that I'm wondering.
