I'm going to put boards against the chimney in the bathroom for waterproofing and tiles. The chimney is practically always "cold" but there is a fire in the stove (there is a risk of smoke leakage). What would you use and how? I was considering fiber cement (minerit), adhesive (fix), and some nail plugs (steel). Unfortunately, I haven't found countersunk nail plugs in steel, only with a rounded head, which complicates plastering.

You say risk for smoke leakage, it should be tight and not leak, pressure testing is a tip,
you should attach it in the brick and avoid the joints, preferably a little deep holes, so it grips well

Thanks for the tips about countersinking in minerite. That's probably how it will have to be. What do you think about fiberglass gypsum (fermacell) on the beam? Is it considered flammable in any sense?

I think you're on the right track with your own ideas. My main tip is to check with your sotare before you start putting something up, so you don't get feedback only after the bathroom is finished. Here, the sotare has been very helpful when we've had similar questions.
