I have dried a lot of blocks that I've then cut up; of course, I have to choose pieces to avoid cracks then. With through sawing, I find thick planks, lots of spacers, and lots of straps work well. I have dried under a roof in an old barn.

Good tip to cover the gable with plywood! I will probably think of something similar, as it's the end grain that is the most sensitive. But maybe just white glue will be enough?
Glue or latex paint is common, right?
