Hello,

I have a greenhouse where it leaks at the ridge beam. This is due to two things:
1) Three of the roof windows open automatically when it gets warm (even if it's raining, which causes rain to come in). I've put a plastic strip there, but it still doesn't seal perfectly at all windows even when closed.
2) It's hard to make it tight as I've used old insulation plastic for the other parts of the roof. This is being resolved gradually as I apply extra sealant, but I'm looking for a more durable solution.

My idea is to order a ridge plate that I can place on the top. With the right angle and length, it should cover both the openable windows and the insulation plastic without interfering with the window when it opens.

Am I thinking correctly? Any tips along the way? I'm a little worried it will be noisy when the wind blows, but maybe that's an unfounded concern if I secure it with many screws?

Definitely a working solution.
If I remember correctly, I have something similar on our greenhouse, but I just put some sheet metal over the openable windows. Otherwise, we have a regular 22x95 decking board lying flat on top of the ridge beam. It works so-so, and less well where it is jointed. A bit of sheet metal solves most of it if you're bothered by leaks.
I don't think it makes any noise. They are relatively small protrusions.

Put some silicone or equivalent where the sheets overlap, (if your greenhouse is longer than what the ridge sheets cover).

We solved the problem with a bent sheet metal at the opening windows. The sheet goes up under the ridge plate. Here you can see it. A metal flashing bent near an openable window, extending under a ridge cap on a greenhouse roof, with a decorative finial on top.
