We are in the process of changing the facade on our villa and two of the sides are being additionally insulated. We are working on this ourselves and given the summer's weather, we're pushing through between the rain showers. The insulation is stored inside, so it is surely dry. The paneling, however, is stored outside in a large party tent, so it doesn't rain on it, but it feels like it still gets a bit damp from all the precipitation and now also the dew that is starting to appear. Right now we are working on a gable that is made of brick. We have put furring strips on it and are now putting up paneling, so no additional insulation here. How sensitive is it to moisture? We have a proper air gap between the brick and the paneling, it should dry without issues, right?
What about when we do the last side of the house you are already working on. There we put up furring strips and additional insulation before we put the paneling. How great is the risk of building in moisture there?

Sure, we have an air gap behind all the paneling. Great, then I don't have to lie awake at night. 
I might as well ask another thing. By the windows, we have used insulation and installed window trim. New window sills have been installed. Under the windows, the insulation is not covered by the window trim; is it enough to "protect" it with the window sill? If you bend down and look underneath, you can see the insulation. Is it really okay to have it like that, or should it be covered with some sort of trim?

Isn't it possible to bend down the metal so the gap disappears? It's not a major catastrophe but not entirely optimal. Snow can drift in and wet the insulation. I would probably try to fix this. Moving up the casing is also quite quickly done.
