I'm going to replace the outer panel on the garage where I suspect it won't look very pretty once I remove it. The garage is from '66 and water has gotten into the walls due to a damaged gutter...

I had planned to remove the panel, inspect the damage, put in a couple of supports to then replace any damaged load-bearing parts, and add new insulation and new paneling. Then I continue around the entire garage, finishing with the front and replace the doors.

Do you think it will work and what should I consider?
 
Replacing paneling is a fairly straightforward job. However, if it's necessary to replace the sill, it can be quite tricky, especially if the entire sill needs replacing, not just limited sections.

Calculate how you want the paneling to align with corners and windows, so you don’t discover problems after nailing 80% of the paneling.

Install a ventilation gap/batten under the paneling, so that small amounts of water can dry out.
 
I always cut a drip nose on the panel beforehand, and soak it in oil.
 
Suspect that I need to replace parts of the framework since time has taken its toll. The interior walls in gypsum look okay, but if you need to replace parts of the framework + new insulation and windproofing. But how do you deal with the moisture barrier against the gypsum?

Do you need it in a garage or?
 
If you have heating in the garage, you need a vapor barrier. Otherwise, warm moist air from inside will seep into the wall and condense in the insulation, resulting in mold growth.

Depends on how sealed the garage is otherwise. My garage had no vapor barrier and the heating has been on since 1964, it was as fresh and nice as can be when I renovated it 2 years ago, certainly partly due to gaps and leaks.
