I've heard that OSB is very moisture sensitive, but I've also heard similar things about plywood. If you're building a shelf yourself in a basement that isn't exactly water-damaged, is it that critical? Do you need to put a sill gasket between the studs and the concrete wall and use special anti-mold paints on the wood, or is it enough to just put up some studs and OSB shelves?

Does it get worse if you also want to do it in a laundry room?
 
I would neither call OSB nor plywood "very moisture-sensitive" in the sense that you can't use them in normal basements. If the basement has a relative humidity below ~75% (buy a meter and test), then go ahead.
 
OSB is usually waxed so it's probably just the sawn edges that can be a bit sensitive.
