No, insulation does not increase the risk of mold, it actually becomes slightly lower - in unheated spaces. If there's a bit of added heat, it drastically reduces the risk of moisture and mold.
However, poor or no ventilation is not a good idea. So whether you insulate or not, you should ensure there are some vents. If you occasionally add moisture to the garage, you should have mechanical ventilation (i.e., a fan), a moisture-controlled PAX fan is probably a good choice. Many garage doors have air intakes at the bottom, then you only need a higher positioned exhaust vent, possibly with a fan.
No, tear down your drywall now, and then take some pictures and ask here on the forum how you should proceed to ensure an air gap and wind protection. Then you'll see that it will turn out really well. Just foolish to make a poor compromise solution, I think.
