I have now reconsidered and will place OSB behind the gypsum in the rest of the house.
Should the OSB and gypsum boards be mounted with staggered joints?

How do you do it?

I screwed OSB 1200 width against stud CC 60, then the drywall was screwed 900 width continuously with staggered joints. The drywall seams then don't always hit the stud but it works well anyway and is very convenient!

You can also screw 1200 drywall with staggered joints against the OSB and always screw into the stud.
 
Of course, you should offset the joints. Partly because you'll get neater and more even joints in the outer layer when you can joint in the middle of the underlying board. Then it also dampens sound better, and you avoid the risk of accidentally putting something in the gap between four boards.
 
If you attach 900 gypsum, do the edges really stay secured to the OSB?

It feels like it might be flimsy.

No, not flimsy - I can guarantee that, my entire house is built like this and there are no signs of flimsiness, cracks exist. You of course fully screw both layers.
 
It works perfectly fine to nail OSBn too. ;D
