I have no direct experience with plaster.
For the plaster that was on our walls, it came loose just by looking at it. As soon as we took down the plywood and the pressed chipboard or whatever it was, the plaster fell off.
Then we want smooth surfaces. So is it a matter of putting something on top of the plaster?

It is probably clay.
Smooth surfaces can be achieved with plaster. Of course, you shouldn't expect to get perfectly straight surfaces like a plasterboard, but that's also the charm of old houses - they shouldn't be, and aren't, one hundred percent straight.
