Are the brick wall and the wall with wooden studs load-bearing or not? I have the impression that it is the walls running in the lengthwise direction of the house that are load-bearing.

In this case, the heart wall and its extension with a beam are likely load-bearing. However, one cannot be really sure without having seen the complete drawings. It's not a good idea to start demolition before ensuring how the construction holds together. A house that has been a bank premises can offer some surprises.
