I was thinking of making a cutting board or two as Christmas gifts but am considering wood and what makes sense to start with, as I don't have any on hand myself.

Then I'm considering inlaying a 5-10mm teak list for some variation, should be able to find that - would welcome suggestions for other suitable types of wood

Probably goes well but seems expensive.
I would start with an edge-free birch or alder plank, I might have enough oak myself for my own cutting boards.
There are small sawmills specializing in oak, you can check with 'Peter i Dala' or Arnebo såg AB who advertise on Blocket.

Run battens at once instead of massive shelves? Then you can mix freely and it won’t be too expensive for two cutting boards.
Also check any stands for offcuts from countertops, even if the more exotic woods disappear quickly, you might get lucky.

Just look at the types of wood cutting boards are made of. Hard woods, Al, Oak are the best.
