Which cc measurement for best load capacity?

Is it possible to use 40cm deep shelves with brackets that are 30cm?
How many brackets should I have per shelf?

The shelves will be in the "jordkällaren" (an old milk chamber) so what's going on them is quite heavy, wine/beer/jam/etc.
