Hello!
I'm planning to install ceiling gypsum board in my kitchen where I'll be plastering over the seams. Do you use the same type of gypsum as if you want ceiling gypsum with beveled edges even though you'll be plastering them, or should I use "regular" wallboard for the ceiling as well? I've previously installed short planks and noticed they were reinforced with fiberglass, which made me unsure if regular gypsum will work. I don't want a ceiling that bulges down or completely gives way after a year...

Use cc30 screws and use gypsum that is recessed all around. Norgips Plan 13 for example. http://www.norgips.se/index0,785.htm
