This gypsum board is to be installed in our new bathroom. However, it has absorbed water that leaked in through the broken plastic. Is it a problem? Can the company still use the gypsum board, or should I ask them to get new gypsum?

It will dry up. Seems to have just a few drops on the record edges.
 
Those little ones are no problem but do check when they split the pile so it's not soaking wet over a large area.

It's happened again. After being away for 4 days over the Easter weekend, the tarp that the company had placed blew away, and the plasterboard was exposed again when we got home. The top sheet had watermarks along the entire exposed edge.

What do we think about the plasterboard's status this time?

What should I say to the company?

Tell them to get new ones. You shouldn't let them build in moisture.
