Wall with texture

Planning to renovate the basement this winter. One of the rooms will become a so-called wine cellar. Therefore, I need tips on mortar/techniques to achieve a wall in this style:

I gratefully accept tips on mortar/construction of other types of similar walls, i.e., walls that exist in really old cellars and that look old and stony.

What do you have on the walls today? If they can be polished, you can get the structure you want and then paint them with a suitable color.

If you're an amateur like me at masonry & plastering, just purchase some plaster mortar, mix it, and apply it to the wall. Use only a trowel to help even out the wall/plaster. It will certainly not be smooth/even, new and professional-looking. It can be given a textured surface with a brush or burlap if desired.

Just make sure the wall is well-moistened when applying the plaster so it adheres nicely.

For moisture-laden walls, it's essential to use the right mortar and paint.

The walls are constructed of hollow concrete, then of course plastered.
