I'm considering wall-mounting a small desk, specifically this one:

The mount appears to screw into the wall with 1 screw at each end of the mount at the top. The desk is approximately 45cm deep and 92cm wide. It will occasionally be loaded with 5-7 kg at the outer edge. I plan to attach the bracket to a single-layer drywall using 1 m6 drywall anchor at each end. If there were a screw hole in the middle of the bracket, I could hit a stud, but that's difficult with the placement of the screw holes. Are 2 m6 anchors too weak for this type of mounting and the torque that will occur when the desk is loaded? Are there better alternatives for fastening?

Two molly anchors, as you suggest, will easily hold. I recall M6 molly supports just over 20kg each.

Alternatively, you could carefully drill a hole in the middle and attach it to the stud.
 
Good idea to add another hole. I have a beam right in the middle of where the desk should sit, and if I can hit that too, it would be optimal. Can you drill a hole without ruining the steel's strength in the bracket?

Yes, undoubtedly, that's nothing that needs strength. It's hard to see how wide the profile is but I guess it won't be a coarse screw. Take one with a round head that you paint black so it looks nice.

Interesting! I've seen them a long time ago but never tested them. I have removed many drywall expanders previously without significantly damaging the wall, so that's not a problem in itself. If they withstand higher loads, that's interesting!
