I have removed the drywall that was behind the stove; they crumbled and were quite black on the back.

The chimney is uninsulated corten steel, so I plan to insulate it, but what should I do with the wall?

I spoke with the chimney sweep from the municipality, and according to him, the best option was metal panels at a distance of 25-30 mm from the studs. The next best was a fiber cement board at a distance of 25-30 mm. I'm not sure how to do this properly?

What is the best way to proceed? I want to have tiles up to a certain height behind the stove, then painted or wallpaper or something else up to the ceiling. Is it possible to paint directly on the fiber cement board or even apply wallpaper on it?

I installed a stove with an insulated chimney. It requires 10 cm free space to combustible materials. I put a gypsum board behind it, which I painted with white paint mixed with blast sand to get a plaster-like texture. I thought it must be easier to repaint behind the stove than to re-wallpaper when the time comes.
 
Are new stoves "insulated" or designed not to emit as much heat backwards as older models?

I am not too worried about the chimney, as I plan to insulate it properly.
 
The thing about stoves is different, it is often specified in the papers what distance to combustible material is recommended - it has to do with the outer temperature of the casing.
