Joist hanger should work well in rocks..

They have used strong timber, so it will probably hold for your needs.
The attachment to the rock is just for lateral stability and doesn't bear any weight, so a joist hanger or rock anchor that you can screw a couple of coach screws into will work.

Maybe not necessary, but I wonder if it wouldn't be a good idea to have some bracing on the tall structure. There's one of a somewhat odd dimension in the second to last picture, but between the next four posts wouldn't be a bad idea either if there's a wobbly feeling in that direction.

Yes as far as I can see.

However, one usually has something capillary-breaking between the column shoe and the wood, such as plastic spacers or some roofing felt or whatever is available, to give a bit of extra protection to the end grain of the post.
