I will attach a barbell rack of this type to a drywall with wooden studs:

Since the mounts are about 130 cm apart, I won't be able to attach them to the studs. Therefore, I plan to make two "studs" from 2 glued plywood strips (about 15x140 cm) that are attached horizontally over 3 studs with tee nuts on the backside, which the rack will be attached to. Do you think this will be stable? There can be quite large forces if you attach catch arms to this rack that extend about 70 cm and are supposed to catch a "falling" barbell of about 150 kg if you're doing, for example, a squat and can't handle more.

Do you think this will be stable? There can be quite large forces if, in this rack, you attach safety arms that stick out about 70 cm and that should be able to catch a "falling" barbell weighing about 150kg if you're doing, for example, squats and can't lift anymore.
If I were you, I would instead screw two horizontal studs at the right distance to attach the rack to and then fasten it to these.

You mean just use 45mm screws in these?

Appropriate screws for the thickness of the studs... you'll likely need two different types (one to attach the stud to the wall and one to attach the product to the stud).

I would have made a steel frame to attach it to, which I then would have screwed into the studs in the wall, but I'm good at over-engineering these kinds of things...
