I plan to build a sleeping loft measuring 1.4 x 2.9 m and according to the construction table, I should use 45x220 floor joists on the long side. However, this adds quite a bit to the height along with the support beam. Can I use steel studs instead, and what dimensions would I need in that case?

What do you mean? Recess the steel stud in the wooden stud or in the beam?
 
How narrow do you want it?
Square profile 100x50x3 is quite stable.

Embed the wooden beams in the bearer, so your max height will be equivalent to the bearer's height.
