We will tackle the big project of renovating the hallway now in 2023. The first step is to enclose the stairs.
After much reading, partly on the forum, I have a pretty good idea of how to proceed, but I've encountered a problem. The issue is that the steps are quite significantly rounded (see picture).
I would say the rounding is about 5mm deep, and if I just hammer a plank there, it'll create a nice groove for dirt to collect.
I'm wondering if anyone has a good solution for removing the rounding, or if it will require adding a list at the bottom? I've already considered both a plunge saw and a hand router, but you can't reach the corners then, unless you dismantle the entire staircase, and I feel there are more fun things to do.

Does the front edge of the upper step align exactly with the back edge of the lower step? If not, you might be able to place the cover panel on the lower step and attach it underneath the upper step.
It is also possible to place the cover panel on the lower step and let it rise in front of the upper step's front edge so that the step becomes somewhat deeper (which is compensated by the corresponding reduction at the back edge).

Make a rabbet in the riser step 5x25 mm that covers the rounding.
If the underside is also rounded, do not let the riser reach the rounding.

Mount a thicker board and mill into that instead? (Or multiple layers.) You’ll get a cavity, but what does it matter.
