We have leveled our hallway floor with disastrous results.
We used Kiilto Termoplan which we had dry stored for about 6 months.

The self-leveling compound does not want to spread, it distributes in a very strange way with areas that are like just sand, lots of fiberglass floating on the surface, and now after two days, it is still patchily soft on the surface and if I carve it with a knife at any point, I can make a hole in the entire layer thickness without any problem.

What went wrong???
We mixed according to the instructions and have leveled several floors before without any problems.

I have understood that there are problems with expired self-leveling compound, that it cannot cure. The package says the storage time is 12 months in dry storage. But how do I know how long it has been in stock at Bauhaus? Is there any date marking on the bags? I haven't seen any.

Could moisture have gotten into the bag? It can be very devastating.
 
Hard to believe it. The bags have been kept dry, and besides, they are plastic-coated.

Not too cold then (Both storage and casting)? Or something strange with the water?
 
How did you mix it?
Could it have been contaminated in some way, or did you leave it to stand for a while before pouring it out?

If the fibers have absorbed moisture, they may behave strangely, but the sand should still mix in and not form "piles" as you describe...

We have mixed according to the instructions. At Kiilto's support, they say we have used too much water, but I know we haven't... Right now, we're waiting to see if it eventually sets or what happens. It's a concrete slab on the ground, and we're going to tile the floor, so if we just get good adhesion with the adhesive, I'm not too worried about the strength of the filler.
Time will tell what happens.
The last option is to chisel everything away, but that doesn't feel particularly fun.

There should always be a production date on the bags, have you got the exact right amount of cold clean water and mixed with a machine for the prescribed time and waited 5 minutes and run around with the mixer again. If you have stored the bags correctly and the date has not passed, it should absolutely not behave as you indicate.
