Have enclosed the staircase and placed a drywall under the staircase.
In the picture, I'm in the process of plastering the edge of the drywall. My plan then is to bevel a bit between the drywall and the staircase and seal with something really good.

What do you think about that?

The edge (corner) of the drywall will only consist of plaster, and ideally, a corner guard would be best, but then you'd have to plaster on the staircase, which isn't possible...

But how good will it look? Isn't there another way? My idea won't hold up?

It looks like you saved some drywall? Should have put something like a quarter round. [link]
well, the board cracked because they are beveled at the edges. Spackling to get a straight edge.

With that molding, there will still be two joints, right?

I had..
A, installed a planed pine strip 15x15 or quarter round that was painted into the staircase, slightly rounded off the outer corner. Then applied a soft sealant between it and the drywall

B, installed a corner strip either in plastic or wood, where the latter needs to be planed on one side to remove the rounding and painted into the staircase.

Would it hold if I seal between the plaster and the stairs the way I thought, and then trim a regular edge guard and glue it on the outside? It would be a very narrow edge guard then.

That won't work, why didn't you recess the board inside the stringer, now you have to have a trim.

If I taper the entire drywall a few mm and use a really good soft sealant instead of putty. Fill up to the level of the wood with the sealant.

Giving up after that question...

White NORGIPS J13 end strip, 3000mm, shown at an angle, highlighting its length and shape, used for gypsum applications. Attach a white J13 finishing strip on the gypsum.

great! And then just caulk between the stairs and the trim. Will it hold?

usually attach the strip then drive some screws through the drywall/j13 the flap underneath is longer so it's possible to get a screw through..so there usually aren't gaps between the strip/contact surfaces... it's also possible to glue the strip

Now the metal profile is in place! Turned out great. Just need to paint the stairs now :)
