I’ve had builders at my place who have done some construction work.

They have, among other things, put up a wooden stud to support a glulam beam.

The stud is about 30 mm from the chimney, with 13 mm plasterboard in between, and about 17 mm of air.

Is this okay? Can I put a Minerit board between the wooden stud and the chimney?

No hot flue carries go through the chimney. If we do have any, we will run pipes on the other side.

Is this okay? I shouldn't need to complain about the work (it was done over a year ago) and ask them to put in a metal stud instead, should I?

If you want a completely reliable answer, you should ask the chimney sweep to take a look, or alternatively, the company performing the mandatory fire protection inspection (usually the chimney sweep). If they say it's okay, then it normally is.

In my opinion, it sounds completely reasonable; you have both fire-resistant plasterboard and an air gap. It seems to be better executed than in many other cases.

Other factors to consider are how far down or up the chimney it is and what you are burning in the chimney, as these are factors that affect the flue gas temperature, and consequently, the temperature of the chimney stack. But since you say there is no hot flue channel in the chimney, you can probably feel more than reassured about this.

While you're at it, check the rest of the fire protection in the house.
 
Hope so. Would be nice to avoid moving beams or switching to iron. Old beams can stay. And those lying against the chimney (made in the 60s). Floors are apparently also allowed to lie against it. I'll never figure out all the rules. There's enough to struggle with anyway...
 
I heard that a glulam beam can withstand fire better than a steel beam? Did I hear wrong? Is there someone knowledgeable who knows??

I had exactly the same "problem" and therefore contacted our chimney sweep. According to him, there were no issues as long as there was an air gap between the chimney and flammable material - and you also have plasterboard in between, so it should be okay.
However, there are lots of regulations regarding this, so contact the chimney sweep - as Totte_s suggests.
