As a complete amateur, I've learned that the first coat of paint is only to show where I've missed with the filler, the second coat is to reveal the smaller flaws and uneven areas I've missed, and it's only when I get to the third coat that I expect not to have to fill and sand before the fourth coat, but that doesn't always work out either.
My point is to keep working until you are satisfied with the result. The professionals cost a lot but usually get it right the first time, while we less talented/experienced ones have to waste a bit more paint, filler, and paper before it turns out good
