Is it possible to "fix" the broken bricks in a fireplace like this?
Or do you need to replace the broken ones? Or "rebuild" everything from scratch?

Is it something a layman can take on?

An old fireplace with damaged bricks, surrounded by tools and a cardboard box, possibly needing repair or replacement.

(Within the "foreseeable future" we will probably install some type of insert yes...)

if you have old bricks that have come loose, you can simply repair. Clear away the old mortar and rebuild. Otherwise, you'll have to get new bricks to build in.
I don't see the need to tear everything down because of a few fallen bricks. Nice fireplace.

I think the broken stones are still there.
How do you clean the mortar? And how do you build in the broken ones?

You scrape, sand, brush, and/or chip away the joint. I would get new stones, but they don't seem to be standard stones, so it may require some searching or at least cutting. Replacing cracked stones would probably look quite odd.
If you plan to do it yourself, take the time to learn the method, i.e., borrow a book or at least read pages that specialize in that type of work.

Out of pure curiosity. What has the poor stove been subjected to?

Yes, shall take a better look next time we are up. Probably an insert sooner or later as well...

The stove has been subjected to burning and probably people using the edge to brace themselves when putting on ski boots, etc... it's been there since 1970... :P
