Garages are sensitive in terms of construction, as the wall with the doors is not as rigid as a regular wall. There is a risk that the structure will collapse like a house of cards. However, you do have quite a bit of rigid wall next to the doors, so it's possible that sheet material on the walls will be sufficient for stability.

Now you have quite a bit of sturdy wall next to the doors, so it's possible that using sheet material on the walls will be enough to achieve stability.
Yes, sounds wise; this is how it should look when it's finished. The two "doors" are actually an opening into the existing garage. It might become more stable as it will be locked into the existing garage.

Hello, your construction looks logical, as does your facade drawing except for the middle part which I don't understand how it is missing from us as a shed roof? It becomes very low.

The middle part is an existing garage/economic section where I'm going to open up between, hence the beam! So it will be open between the new and old garage!
