A deflection of 1 cm in the middle is reasonable. Very good timber quality.
 
So the pressure on the studs towards the middle is something we shouldn't be worried about?
 
And how does the snow load affect? We live in snow zone 3 by the coast.
 
Aren't the vertical posts in the attic directly above the wall that is to be removed, if so shouldn't they be carrying load? They also look like they are original from when the house was built, right?
 
According to the section drawing (from the renovation), it's just a regular ceiling joist in the attic that supports the attic floor, but when you look closely at the last photographs, you see a post that is probably vertical and seems to have been added afterwards. I didn't notice it initially due to the perspective, but it is clear that it can change the conditions. When I scrutinize the drawing, I also find that the ceiling joist can be at most 2.5 m long. This allows for a point load in the middle of about 3 kN without bending too much. But it's difficult to solve problems remotely when the drawing and reality don't seem to match.
