Laid tiles in a part of the kitchen near the stoves.
There was about 50% concrete and 50% joists.
So to avoid cracks, I skipped the chipboard and leveled the entire area with self-leveling compound, about 4cm thick.
Fiber-reinforced Finja self-leveling compound and reinforcement mesh.

It became flat and nice to lay tiles on.
In the area with only joists, I installed 12mm plywood between them, level with the top of the joists.
Feels like it turned out really well.

I can't really make sense of your pictures. Is there construction concrete under your joists?
 
Thanks for the great post. The old beams do not sag but are not completely straight. Not the best picture. There's only gravel, no concrete under/between the beams.
