I am going to build a deck on sloping ground and think it would be smart to place the posts in the plinth. All the drawings I find have the frame mounted in the plinth.

Do you see any problems with mounting the post in the plinth?
 
Which post, the railing post or a post for reaching between plinth and joist?
But generally speaking, it usually works fine. You have to consider the placement and that it's harder to get a taller post straight in a plinth than to level the joist and screw into the plinth. It's easy for it to lean slightly outward/inward; an angle error over 2m is more noticeable.
 
The post should be at least three meters high because I am going to build a flat roof on the patio. I understand the problem with the angle errors. But it should be resolved by fastening the beams to the roof before inserting the second screw at the bottom in the plinth.
 
Sure, you just need to be skilled with the level so it is plumb in both the x&y directions. Only one is adjustable via the post base, the other depends on how straight the plinth is.
