I am going to install interior walls in the garage and I'm considering whether to put OSB first and then gypsum on top, or if I should just use plywood.

I'm thinking that gypsum is sensitive in a garage, if you bump into it, etc.
Price-wise, it is essentially the same.

Then you can read the table here and see if you meet the requirements for fire protection. In principle, it should not be a problem if you do not have windows or doors nearby.
