Hello,
I have renovated a house where I removed old drywall and installed OSB boards and new drywall.
On some walls, I just mounted additional drywall directly onto existing drywall walls.

Now I'm going to tackle the garage, where we want to be able to put up shelves and similar on the walls, but there are currently only drywall panels.

Is there anything specific to consider when renovating a garage (e.g., moisture, fire protection, or similar), or can you install OSB and drywall as usual?

And is it okay to mount OSB directly onto the existing drywall, and then a new drywall on top, to avoid tearing down the old one?

if you have a concrete floor, you should have at least a 6-7 mm gap between the floor and the boards so they cannot absorb moisture
 
Elfa hang track in the studs will take you far. Just hang the rails and shelves afterwards.

Elfa maybe it won't be.

Thinking of OSB to soundproof a bit from the garage to the house.
 
It's just a matter of layering. The more layers, the better soundproofing and fire protection. Just make sure to get long gypsum and wood screws.
