When and how do they bend?
If you place a 50kg weight on a 4m 45x45mm that only has underlying support at the outer edges, it will bend no matter how dry it might be.
The same if you stack your finished planed boards with too much space between them.
However, if you mean that they bend when they are nailed to the wall, you'll probably need to go into the details.
In summary: you probably need to be more clear about the situation after you have finished planing.

And in response to the only question you actually had: they bend either because they dry out and the fibers in the wood pull in a certain direction, or due to gravity or other physical influences.

There are several reasons. Remember that the natural state of wood is a round log. Wood should preferably dry slowly and stacked so it lies flat. The quality of the wood (density, sawing parallel to the fibers etc) plays a significant role, as well as the type of wood.
