I am going to put up two walls which will turn one large bedroom into two. I'm considering insulation mainly for sound. What is recommended? These are two bedrooms that will have long sides against each other, and the best possible sound insulation is desirable since we have small children in the house who should not disturb other children.
Is mineral wool the best sound insulation? Is 13mm plasterboard sufficient or is something else recommended?

wood fiber boards, double gypsum board on both sides, seal around all joints. That's soundproofing for dummies. If you mean it as well as possible, I think you should build a double stud wall with staggered, offset studs. It takes up slightly more space than a single wall, but it's not too bad. Mineral wool in between, OSB+gypsum on the outside, and carefully seal all openings.
