I'm planning to build a media wall, from one side of the wall, 2.4m out, 60cm deep and then from the floor up to the ceiling. I want to include the TV, amplifier, speakers, etc. in this wall. But how the heck do I make the cutouts in one layer of OSB and one layer of drywall? Can I cheat and use some kind of metal profile around the holes and then plaster the wall? Otherwise, I'll never get the cutouts straight and neat!

I'm not quite sure what you mean. But cheat? Of course, you have to use filler and you should use corner profiles, otherwise, the outer corners will quickly become ugly!

Is it an existing wall you are going to make the hole in?

Don't buy flimsy Hornbach corner profiles, but "sturdier" ones that, for example, Beijer sells.
 
ahhh, so you use a profile iron?!??! I didn’t know if you just cut out the holes with a circular saw and straightedge and then possibly filled a bit. Never understood how people can get the "cutouts" so straight and nice in all the pictures I've found.

No, I'm going to put up a wall with wooden studs, a layer of OSB, and then a layer of plasterboard.

I would not have cut out the holes afterward but "shaped" while framing so you get a framework in every corner and screw the profiles in, then there are probably endless variations to do it on :)
 
Sounds like you either have some learning to do in painting or you take help from a professional.

A basic rule is to have studs behind all board joints, the joints must then be "reinforced", at outer corners preferably with steel profiles and on straight walls with paper strips that are embedded in filler.

You can't achieve that with plasterboards without filling.
