We want beadboard as a ceiling but the surface is quite uneven. Does this need to be evened out for a good result, for example with masonite or similar? I was thinking if one can staple/nail some strips of masonite across the existing one as is usually done with furring strips? Of course, we want it to add as little as possible so we can retain maximum ceiling height.

Yes, masonite is excellent for the purpose. Carefully level the ceiling beforehand. Old houses tend to not be particularly straight.
It turned out to be masonite and a bit wavy but really no problem to get in place, just a bit tricky to do it alone with the longest pieces. Just as you write, "perfectly" straight doesn't quite fit here. Done now, but I'm attaching a picture from the work in progress where you can also see some masonite.Oldboy said:
