There are a number of durable laminates on the market but I can't seem to find anyone who sells just the laminate. It's either glued onto countertops or comes in the form of click flooring, etc. I have a staircase I want to cover, the stair noses are round and I want the laminate to follow the curve. Does anyone know where I can find laminate suitable for a staircase?

So, now it's actually the fact that you put together several layers of something called laminate. A plywood board is a laminate, after all. But if I stop nitpicking (sorry), I understand it as you mean the actual pattern layer with a wear surface? It's discussed a bit in this thread.

Correct of you! I didn't really know the name of the actual "wear surface" with the pattern! But it still seems too thick for bends around the stair nose :-/ Maybe I should plane them flat anyway or alternatively use an alu. list!?
