Is there any difference in stability and load-bearing when installing floor joists attached to the support beam with joist hangers compared to placing them on top of the support beam? I have some space issues with the ground in an extension, which allows me to increase the dimensions if I do so.

Not if it's only about one section. If it's about two or more sections, beams that rest entirely on top have significantly better properties at the same dimension. Google continuous beams.

Yes, it's just two load-bearing beams.
