Feels like it might get a bit too high.... the house will be approximately 7.3-7.4 meters tall, which makes it likely to become a bit too airy :)

Yes, that's right. Such ones, but in truss construction, then it should be great.

Just waiting for Nässjö roof truss factory to come back after their vacation now...
 
getting trusses with a detachable top part is very common so it shouldn't be a problem, I've pressed tons of those:)
 
I have trusses on my house with a span of 10m (including about 80cm each side overhang outside the house) 45-degree slope, i.e., 5m high - they came in 2 parts cut just above the collar tie, I believe it's called, and with pre-made nail plates - when you put them together, you were supposed to nail a certain number of nails into the nail plate.

Regarding beams, I have a beam in the middle of the house - your trusses should be a bit larger than mine - so it probably requires strong dimensions to manage without a beam - or another type of truss.
