You will have trouble running with a smaller hole saw diameter without the pilot bit. There's nothing to center it then.

If you want to avoid the chisel, then the tip about a router is probably the way to go. Which, by the way, is a very good reason to buy another machine d^_^b

Okay, but maybe you can set the center drill to be just a tad longer than the actual hole saw? It's not a problem if it’s a few mm deeper in the middle.

I'm not familiar with routers, unsure how they work.

You can do that. That's what I usually do myself.
