We have an old house from the early 1900s. The plaster on the chimney on the upper floor has started to come off. I decided to remove the old plaster and it turns out that the chimney was built with stones, bricks, and pieces of roof tiles. Quite a bit is coming loose entirely. My plan is to remove what is loose and mortar the joints, then apply new plaster and paint white. Can anyone give advice? Which mortar should I use indoors for the joints? The attic will be renovated and furnished.

Try to mesh it with galvanized plaster mesh, and plaster with 3mm lime mortar. It handles movement best. Otherwise C mortar, but it handles movement slightly worse. Prime with loose mortar first.
