I am currently gluing 6mm renovation plasterboard to the walls in my bedroom. It's turning out great. What should I do with the wall sockets? Can they be extended 6mm to be flush with the plasterboard?

Usually, extension rings were used in the box. Number of rings as needed.

Have I understood correctly that you place this build-up ring in the device box so that the insert itself comes out 6mm? A descriptive picture would be good.

In practice, it can also be done without rings with longer screws. A gypsum edge against the device shouldn't be a big problem. Maybe the original screw is enough.

A hole in one is good for drilling the holes in exactly the right places on the boards.

You remove the entire outlet (disconnect the cables) and place the ring behind it. You may also need to change to longer screws so that they are sufficient to screw the outlet back on. But it shouldn't be necessary if it's only 6 mm.

I think it is more the rule than the exception that boxes don't reach all the way to the edge in the hole. So it should be enough to just screw the outlets back in, possibly buy longer screws. IF you buy longer screws, keep in mind that there are at least 3 different screw types. Some screws with plastic thread, screws with regular machine thread (I can't remember if it's M3 or M2.5), and a special screw, which I believe only ELKO has. It has a "double thread", looks like M thread. But if you look closely with a magnifying glass, you can see that the thread has two "openings" so there are actually two M threads on top of each other. A regular machine screw can be turned a quarter turn or so.
