I have blocked some windows. It is a wooden house from 78, and there is a vapor barrier plastic directly behind a chipboard in the walls (though it feels more like garbage bag material than the thick plastic used now). In the hole where the windows have been, I will now add new vapor barrier. I wasn't planning to put in new chipboard pieces because I'm thinking of adding horizontal 45x45 studs with more insulation on the entire wall. Is it okay to place a plastic that covers the holes + about 20 cm extra all around? The overlap between old and new plastic will be on each side of the chipboard.
 
When laying plastic today, you should have a 20cm overlap and tape it properly. If you place it on either side of the chipboard, it will likely be less successful.

Most things are doable, and you might not notice it at all.
But since you’re already tearing down, you might as well free some around the windows and tape the old plastic.

If you set the circular saw to a cutting depth a few mm less than the thickness of the chipboard, you will have exposed the plastic in less than fifteen minutes per window.
 
True. I'm going with your approach. Smart with the circular saw, it will be easy to break off the pieces later. At first, I thought it would be difficult to remove the chipboard without making holes in the plastic.
