Eventually, we will fix up a room where the walls are quite lumpy from some sort of plywood or paper, beneath which there is clay plastering and inside that, log walls.

I considered removing the clay plastering, but after reading some professional literature, it seems like a bad idea. We'll probably put up gypsum over the existing lumpy surface.

Does anyone know if there is a thin gypsum board that is still stable enough to provide smooth walls? It would be a bit unfortunate to use too thick a material as we would then have to redo the windows and so on.

Yes, admittedly, but it is also quite easily bendable. The walls will continue to be bumpy. I have the same problem myself and have considered straightening it with masonite strips. I don't think I have clay plaster inside the masonite. I suspect it's rendering with reed mat and the whole shebang.
