I've been thinking for a while, but I'm constantly pondering what's right!
Today there are only particle boards on the wall, the house is from '79.
The door frames stick out 1cm from the wall.

I want to put drywall over the particle board, as the surface and joints of the boards aren't great.

My problem arises when I think about drywall, and how due to my drywall choice, I should handle trims.
Previously, there haven't been any trims, which is something I definitely want.

If I put renovation drywall, it builds 6mm, and then I would lay it against the frame today, which would create a gap of about 4mm - which won't look so nice when I put trim there afterwards I think.

The alternative is to go with 12.5mm drywall, but then it builds 2.5mm more than the frame.

I had a thought about lowering the edge, but due to the fitting, that's not possible.

What should I do?!

You can use a door/frame casing or a trim strip to extend.

It should work fine with both types of plaster. A gap of -4 - 2.5mm will not be visible once the trim is in place. I have personally had more than a 5mm level difference on some windows/doors that wasn't visible with trim. But in the worst case, there are also various types of clackfoder available. It is also possible to fill a narrow gap with caulk.
