Is there anyone who can explain the different measurements of building boards and when they should be used?

For example, there is 2500x1200. These are good if you have c/c 600 or 1200 on the studs. I assume you should cut to the desired ceiling height?

But then there is 2440x1220. These become 20mm too wide for c/c 600/1200. Should you cut them or what's the idea? Are they meant to fit a 240cm ceiling height? Cut off 4 cm or when are the walls 244 cm?

Then there is 2390x1198. There will be a 4mm gap if you lay them on c/c 600/1200. Is it to absorb movements or to have a margin if it's not exactly c/c 600/1200? Then you have 1cm in height to flex on.

Then there's the thickness. OSB seems to come in 10, 11, and 15 mm. Plywood in 12 and 15 mm and gypsum in 9.5, 12.5, and 13 mm.
 
OSB that is 1198 wide should be installed with a gap to prevent cracks in the wall when they move with the seasonal moisture changes.
